Black pepper

This spice is prepared from peppercorns of pepper plant, a climbing vine growing in the Coast of India (Malabar), Vietnam, Sumatra, Java, and the Philippines. Pepper is one of the most popular spices in the world. We have white, black, pink and green pepper. All peppercorns are fruits of the same plant. Black pepper is obtained by harvesting immature peppercorns. Harvested peppercorns are sun dried until they turn into brownish black color. Pungency of pepper is caused by a resin, chavicine. Peppercorns are used in soups, broths and marinades. Ground pepper is more widely used. It is added to soups, broths, sauces, lunchmeat, meats, flavored cheese such as spreadable cheese, salads, vegetables, and eggs.
