Roman cummin is an annual plant with white and red flowers from the Umbelliferae and comes from Asia.
Seeds similar to caraway with bigger and grey, green-brown seeds are used as seasoning. It is a stenothermal plant.
It contains about 3% of ethereal oils with a different fragrance than that of caraway. It also contains bitter, strong-flavoured substances.
Cummin was well-known to ancient Egyptians, Greeks and Romans.
It was used as pepper on account of its strong taste. Nowadays it is an important seasoning in many cuisines wordwide.
It serves as an indispensible addition to curry.
