This perennial plant belongs to the family Zingiberaceae and is used as a ground rhizome. It has been cultivated for over 2000 years in India, China and Near East. Turmeric is sold as dried or ground.
It makes meals fragrant of a mild, warm aroma and yellow.
Turmeric contains ethereal oil characterised by a strong fragrance
and light-yellow, turmeric dye. Rhizomes and thick spice contain this dye that is harmless to health.
On account of having a specific, spicy taste and fragrance, turmeric is used for strong-tasting sauces and added to muscat.
Turmeric and turmeric oil are also used in the perfumery industry.
