Bay Leaf Laurus nobilis

Bay, e.g. laurel, is a Mediterranean tree known and used as late as in ancient times. It has shiny, dark-green leaves and can be quite sizeable. It is the evergreen shrub or tree growing in the Mediterranean region, Iran, Syria and elsewhere in subtropical conditions. Its leaves are leathery, longish, and characteristically wavy on the edges and lighter underneath. Dried leaves fragrant of a specific aroma and bitter taste are used as a seasoning nowadays. They contain ethereal oils, glycosids and bitter substances. Good-quality bay leaf should be dry, elastic and light-green.
